How to make chicken curry?
Making of chicken curry:
- Ingredients:
- 1-pound or take 500 grams of boneless, skinless chicken breasts or thighs,
- cut into bite-sized pieces.
- 1 large onion, chopped
- 3-4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2-3 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
- 2-3 tablespoons oil for cooking
Instructions:
Step 1: Heat oil in a large skillet or Dutch oven over medium-high heat. Add onions and cook until soft and translucent, about 5-7 minutes.
Step 2: Add garlic and ginger and cook for another minute.
Step 3: Add the chicken to the skillet and cook until lightly browned, stirring occasionally.
Step 4: Add the curry powder, cumin, coriander, turmeric, paprika, and cayenne pepper (if using) to the skillet and cook for about a minute, stirring constantly.
Step 5: Add the diced tomatoes with their juice and bring to a simmer. Let it cook for a few minutes, stirring occasionally.
Step 6: Pour in the coconut milk and bring to a simmer. Lower the heat and let it cook for about 15-20 minutes, stirring occasionally, until the chicken is fully cooked and the sauce has thickened.
Step 7: Taste and adjust seasoning as needed, adding salt and pepper to taste.
Step 8: Serve over steamed rice and garnish with fresh cilantro.
